Pumpkin Bread

This is a recipe I got from Allrecipes.com and made the other day. I'm a big fan of allrecipes.com as well as kraftfoods.com.

Pumpkin Bread

Prep time: 15 min.
Cook time: 1 hour
Yields: 32 servings

Ingredients:
1 c. butter or margarine, softened
3 c. sugar
3 eggs
3 c. flour
1 T. baking powder
1 1/2 t. baking soda
1 1/2 t. ground cinnamon
1 1/2 t. ground cloves
1 1/2 t. ground nutmeg
1 16 oz. can solid pack pumpkin

Directions:
In a mixing bowl, cream butter and sugar. Add eggs; mix well. Combine dry ingredients; stir into creamed mixture just until moistened. Stir in pumpkin. Pour into two greased 9 in. x 5 in. x 3 in. loaf pans. Bake at 350 degrees for 1 hour or until bread tests done.

*I didn't have two loaf pans so I bought these 3 smaller aluminum ones at the store and they worked out perfectly. I gave away two loafs and kept one for us. I wish I would've kept them all because the bread is so yummy! I also added chocolate chips. Very moist!

Halloween Project

I thought I'd share a project I've been working on lately. For those who don't know, I really like to cross-stitch. I enjoy having a project like this while I'm watching TV or a movie at home. I usually have most of my projects custom framed, but that gets so expensive! I decided with this stitchery to try to frame it myself. My mom has done a few things this way, so I figured I'd take a stab at it myself. I plan on ironing the stitchery, then taping it tightly onto a piece of cardboard. Then taping the back of the stitchery to the back of the frame. At least that was the impression I got when talking to my mom. I'll post the finished product when I'm done! Hopefully it will work out as planned!An idea of what it will look like finished. It will be a little bit tight, but it was hard to find a frame that would work. This was the best I could find!

This is a simple wooden frame I bought on sale at Roberts for about $6. I am going to sand this and paint it black.

Since being home with a baby, each night I go to bed and usually think to myself, what did I accomplish today? When you're used to a full time, 8-5 job, you are used to getting projects and assignments completed every day. So it has been a little interesting for me for the three weeks now that I have been home each day being a mom. Although I don't feel like I am "accomplishing" a whole lot of things, I have taken care of a newborn baby for another day. And that is no small accomplishment if you ask me (although other moms may differ...?).









So here's a recap of a few things we've done today. Molly unfortunately won't be big enough really to fit a Halloween costume, so today I was trying on the cute little pumpkin hat that a friend bought for her. She has matching socks, but I didn't try those on her today. I was just curious if there was going to be a chance that the hat would fit on Halloween and it looks like we might!
Next we have an oh so content Molly in her bouncer! We just put in a D battery for it to vibrate and so today we tried it out. She loved it! She sat in it the whole time I made pumpkin bread today (will post that separately if the bread turned out! I'm letting it cool as we speak). I think she really liked the vibrations.
And finally we have tummy time. The doctor says to do tummy time three times a day for five minutes. At first she's okay with tummy time but usually by the end of the five minutes she's balling and wondering why in the world we put her in that position! Notice I put a happy picture of her...must be the first minute or two :)
How's that for an exciting Friday?!!

Our Baby Girl!

Meet Molly Nicole Pendleton! She joined our family on October 7th at 11:07 am. She was 7 lbs. 6 oz. and 20 1/2 in. long. Justin and I are enjoying the new experience of parenthood and each day gets a little better as we learn what she needs and wants. We are so thrilled to have her as part of our family! Getting ready for bed...the hat sometimes helps speed up sleep and dad thinks I look like a little thug in it!
